I prepared some bananas for banana chocolate cake for my xmas eve..but I don’t have enough left…my brother ate them..
So I end up just making some more MUFFINS…
Maybe after this one, I won’t be making muffins for awhile…or maybe, I will be making tons of muffins for my friends café…;)

我跑到廚房裏,沒頭沒腦的把粉類和液體分別弄在兩個大碗裏就開始了
只有感覺可以依循。
成果雖然還算不賴
但以我自己來説,香蕉muffin就應該有濃濃的香蕉香氣
除了香蕉用量不夠之外,我想蜂蜜的使用也很影響味道
(還是挺香的,但我覺得不夠)
蜂蜜本身的香會蓋掉不少香蕉氣味和我特別喜歡的榛果香氣
使用蜂蜜的理由是希望口感更柔軟
但我想柔軟這件事可以下次用別的方法試試看
紅糖還是比較合適的搭配
oat barn會給muffin 一種嚼勁
我自己還算蠻喜歡
如果有全麥麵粉應該也很好

English Muffins

‘English Muffins’ are about 3 inches round and 1 inch high, they are basically a bread type dough with yeast and are traditionally baked on a griddle. To get the proper texture when split in two they should not be cut with a knife, but should be split with a fork this gives a rougher texture which gives a better result when toasting (I didn’t know this before doing some research for this review). They are then traditionally served with butter and jam as an afternoon tea but are now popular for breakfast.
American Muffins

American style muffins are ‘quick breads’ made in individual moulds, that is, made with no yeast, but leavened with egg and baking powder.
They were not developed until the end of the 18th century.
They are made with a batter rather than a dough.
They are usually baked in paper cases in mould trays which are deeper than an ordinary bun tray. The American muffin resembles a large cupcake. The secret of making successful American muffins is not to over-stir the mixture doing this will lose the air in the batter and will mean your muffins will not rise.
Muffins remained a basic plain mixture until well into the twentieth Century.
It is true that English muffins and crumpets are related things, though neither should be (or could be) confused with an American muffin, which to British eyes and taste buds is a sweet-tasting cake. Both muffins and crumpets are flat discs about three inches across and an inch or so deep, cooked in a pan or on a griddle.
The main difference between them lies in the composition of the mixture used, which makes muffins feel and taste rather more like bread; in addition, muffins are baked on both sides, so they must be cut in two before they can be toasted.
In the 1930s, the word became British English slang for a woman regarded as an object of sexual desire. No doubt men remembered their schooldays and associated female pulchritude with something tasty.
粉類:
1+1/2 cups all purpose flour
1/2 cup oat barn
1/2 cup ground hazelnut
1 tbsp baking Powder
1/2 tbsp baking soda
1 tbsp cinnamon powder
pinch of salt
液體:
50g melt unsalted butter
1/2 cup honey
1egg and 1 egg white
1 cup ripen banana (I only got 1/2 cup but it should defiantly use more banana…)
1/2 cup buttermilk (I use milk and lemon~)
400F
20 mins~
the sweetness and the softness of this recipe is just good.
Only the moisture is not enough..
Next time, I would add one more egg white and maybe up to 2/3 cup of buttermilk for the moisture…
